It is located a stone’s throw from the Tiberius Bridge, in Borgo San Giuliano. It was the first Italian restaurant to launch the concept of “real kilometre” cuisine, the only one offering piadas made with local flours and cooked at the moment in the open kitchen. Here, at Nud & Crud Restaurant, you can taste the best local products at “zero km”, but also at “true km”. Which means going “beyond” the territory and offering products that are unique in terms of identity, specificity and traceable production chain. Quick and tasty dishes on the seasonal menu, or a rich range of salads that combine the colours and flavours of the moment. Piada and cassoni are available in the traditional version, with extra virgin olive oil or with kamut and spelled flours, without added yeasts. Together with the traditional combinations with ham and vegetables, at the Nud & Crud Restaurant, it is possible to taste “daring combinations”, such as the PidBurger (from piada, which is called “pida” in the Romagnol dialect and hamburger), consisting of Chianina meat, reared in the pastures of Tuscan-Romagnol Apennines, Mora Romagnola (a special pig breed from Romagna) bacon and, instead of mayonnaise and ketchup, a delicious squacquerone-based cream. There is a rich high-quality wine list, followed by selected and craft beers, soft drinks and sodas.
